Must Try Simple Camping Recipes

While the Glacier Ice House lifestyle can be slow and leisurely some days, most of the time you're busy doing fun stuff. If you’ve got your days planned with activities, events, and destinations, sometimes getting meals taken care of without resorting to fast food feels next to impossible.

There are, however, easy to make recipes that will help you get in your valued recreational time and still get dinner out for everyone.

Quick Chicken and Rice

Ingredients

  • 1 tablespoon lard or bacon fat

  • 1 pound chicken tenders, skinless or boneless skinless breast*

  • 1 package of your favorite rice mix, chicken or cheese flavored

  • ½ pound frozen broccoli flourettes

Directions

Melt the lard in a frying pan. Cut the chicken tenders into bite-sized pieces. Set the heat to medium high and sear the chicken.

Mix the rice mix as directed in a microwave safe bowl. Do not stir; just leave the chicken and broccoli on top of the rice. Add the broccoli and the seared chicken. Cook as directed on the rice mix, but at about 8 minutes, stir the mixture, then finish microwaving until the rice is tender.

* You can also make this with boneless center cut pork.

Homemade Mac and Cheese with Kielbasa

Ingredients

  • 1 pound of your favorite pasta shape

  • 2 tbs. butter, salted

  • ¼ cup milk

  • ½ pound Velveeta sharp cheddar

  • ½ tsp. Cayenne pepper

  • Pinch of salt and pepper

Directions

Boil the pasta until it is al dente. Drain and rinse, then set it aside. Cut the kielbasa into bite-sized pieces and heat it in the microwave. Set it aside.

Melt the butter in a large saucepan. Add the milk and cheese. Once the cheese has melted, add the spices and mix well. Add the pasta and kielbasa and mix well over low heat. Adjust spices to your taste. You can also substitute beef hot dogs for the kielbasa. Garnish with paprika or fresh chopped parsley.
